Homemade Granola Bars

Who does’t love a good granola bar?

My oldest daughter recently took a liking to them, which I was thrilled about!

They’re a healthy snack and one more thing she’ll actually eat! SCORE!

Except, I was paying $5 for 5 granola bars. Yikes.

And she would eat like one a day.

So pretty much every week, I was buying another box of granola bars.

I decided I wanted to try to make my own. How bad could it be? I had made granola before, so why not granola bars?

I scoured the Interwebs for recipes.

I wanted something with chocolate chips.

But still chewy.

Must be toddler approved.

I ended up using parts and pieces of a few different recipes. Here’s what I came up with:

Recipe: French Toast Casserole with Salted Frosted Flakes

In my last blog, I posted that I made a recipe for my husband for Father’s Day from Chrissy Teigen’s cookbook, Cravings. It was SO GOOD!

So here it goes:

For the base

1 tablespoon softened butter, for greasing the baking dish

1-pound loaf French bread, cut into 1 1/2-inch cubes (stale or day-old is fine!)

8 large eggs

2 cups (one pint) heavy cream

1 cup whole milk

1/2 cup spiced rum (because rum for breakfast)

Venison and Sweet Potato Shepherd’s Pie

So, for St. Patrick’s Day, I had planned for us to have this Venison Sweet Potato Shepherd’s Pie, but plans changed and the girls and I ended up staying the night at my mom’s house.

We rescheduled our St. Patrick’s Day dinner for tonight and it DID NOT disappoint.

I don’t think we’ve made a bad venison recipe since Eric brought that deer home!

Any who, I found this recipe on Cook like a Cavewoman. We tweaked it a little bit because we don’t have coconut amigos, beef broth or tomato paste.

Ingredients:

For the sweet potato mash:

4 sweet potatoes, peeled and cubed
2 tbsp butter
1 tsp rosemary
Salt and pepper, to taste

For the filling:
1½ lb ground venison
1 tbsp olive oil
1 medium onion, diced
2 stalks of celery, chopped
5 baby carrots, sliced
1 cup small cauliflower florets
2 teaspoons minced garlic
1  cup veggie broth
1 tsp freshly chopped rosemary
2 shakes of ground cinnamon
Salt and pepper, to taste
Ground paprika (for garnish only)
